When dispensing a drink, always pull the handle fully open. For the SPH valve the handle pushes down while the Motorman valve handle pulls to the right and is spring-loaded to close. Generally speaking FCB syrup is mixed with water at a ratio of 4 to 1 and a 13.5 brix. As an example a cup of frozen carbonated beverage (FCB) at 100% overrun is 10% syrup, 40% water and 50% CO2 gas. A quality drink does not collapse in the cup after dispensing and has no air gaps. It will easily draw through a straw and be “Stiff” enough to stack and form a dome above the brim of the cup. The mixture should be uniform and consistent without syrup draining to the bottom of the cup. And finally the temperature of the drink in the cup should be between 24F and 28F.
