Overrun

Overrun (expansion) is the percent increase in the volume of the dispensed product caused by the introduction of C02 and freezing. It is measured by the difference between a full cup of the finished product less the same product melted down. FCB expands due to its ability to suspend C02 within the frozen drink. FCB syrups have a foaming agent that is made from yucca extract from the Mohave yucca plant. This helps in the expansion of the frozen product. Overrun is adjustable for each barrel by changing the freeze barrel CO2 pressure. The typical CO2 overrun is 80% – 110%
